Servings for 4
1 lb boneless, skinless salmon fillets (prefer wild caught, not farmed!)
1/4 cup chopped sweet onion
1/4 chopped fresh parsley
4 tsp horseradish
1/2 tsp old bay 30% less sodium seasoning
4 tbsp low-fat mayo
4 whole grain or whole wheat hamburger buns, split, toasted if to taste.
2 cups worth of fresh non-cooked spinach (or use lettuce, I just wanted to be more healthy)
4 large or 8 small thin slices of tomato
- cut salmon into cubes and drop into a food processor. pulse till it’s the same as ground beef.
- transfer salmon into mixing bowl. stir in onion, parsley, 2 tsp of the horseradish, and old bay seasoning
- split the mixture into 4 equal portions and shape them into patties about 4" in diameter
- heat large non-stick skillet over med-high heat. add patties and cook 2-3 mins per side, or outsides lightly brown and cooked through.
- mix mayo and remaining horseradish until well combined. set to the side
- place each bun bottom on a plate. spread 1 tbsp of mayo mix from step 5 on each bun bottom. top with patties, followed by spinach and tomato. place bun tops on sandwich and serve.
